Start your week right by eating exciting and healthy foods. This spinach salad is a must try! Bed of spinach, sliced apples, nutty whole walnuts, and crumbled goat’s cheese. Drizzled with light and sweet strawberry dressing.

Procedure

2 cups spinach leaves
1 medium size red apple, thinly sliced
1-2 tablespoons goat’s cheese, crumbled
2 tablespoons walnuts, whole or chopped

Strawberry Dressing

2 1/2 tablespoons extra virgin olive oil
1 tablespoon strawberry marmalade or jam
1/2 tablespoon lemon juice
Pinch of ground black pepper

Procedure

* In a salad platter placed spinach, sliced apples, walnuts, and goat’s cheese. Set aside.

* In a small bowl, whisk and blend all dressing ingredients.

* Drizzle generous amounts of prepared dressing on top of the spinach salad.

Serve and enjoy!
