3 tortillas, plain or whole wheat
2 tablespoons olive oil
1/3 cup cooked pinto beans
1/3 cup cheese sauce or white cheese crumbles
1/3 cup chopped bell pepper
2 teaspoons minced red onions
1 teaspoon minced pickle
cold salsa of desired quantity
salt and pepper to taste (optional)
* On a frying pan, preheat oil on medium high heat. Scramble the eggs with bell pepper, pickles, onion, salt and pepper and cook until eggs are done.
* Arrange scrambled eggs over tortillas, pour cheese sauce, add in beans, then wrap tortillas to a roll before microwaving for about 35 seconds.
* Serve with cold salsa.
* Salsa can be included as a filling for a different twist. Best served with fried tofu or semi-fried mashed potatoes.
