Ingredients

1 large watermelon, seeded and sliced
200 grams of cherries, sliced and pitted
¼ cup lemon juice
100 grams roasted pistachios (or choice of nuts)
1 cup sugar
1 vanilla bean
400 ml water

Preparation

* Place watermelon and cherries in a large bowl. Set Aside.

* Split the vanilla bean to scrape out all the seeds. In a small saucepan, add in the vanilla bean, water, and sugar stir and cook over medium heat until sugar is dissolved. Simmer for 3 minutes.

* Pour the mixture in the watermelon bowl then refrigerate for at least an hour.

* Drizzle with lemon juice then sprinkle pistachios before serving.
