100 grams lettuce, roughly chopped
½ cup croutons or 2 slices wheat bread, cut into cubes, drizzle with olive oil and brown in toaster
1 hard-boiled egg, sliced thinly
1 chicken breast fillet
1 tablespoon olive oil
salt and pepper to taste
2 tablespoons grated Parmesan cheese
2 tablespoons mango purée
1/2 cup cream cheese
2 tablespoons plain yogurt
1/2 teaspoon mustard
pinch of salt and pepper
1/2 teaspoon honey
* Drizzle olive oil over chicken breast. Season with salt and pepper. Cook in a griller and wait for desired doneness. Cut in strips or cubes. Set aside.
* To make the dressing: In a small bowl, combine mango purée, cream cheese, yogurt, mustard, honey, season with salt and pepper. Mix until well blended.
* Arrange salad on a serving plate: Place chicken, croutons, lettuce and sprinkle parmesan cheese on top. Put sliced egg on the side. Drizzle dressing or place on the side.
Tips: To clean green easily, soak them first in a bowl of cold water. Stir and let stand for a few minutes. Scoop them out and check the water. Repeat until the water is clean and no residue or dirt remains.
