This chicken congee is a perfect comfort food for rainy days and cold nights. A heartwarming dish to serve and enjoy with your family.
1/4 cup glutinous or short grain rice
3 cups water
1/2 cup diced chicken breast
1 boiled egg, peeled
3 tablespoons spring onions, chopped
1 tablespoon chopped coriander
1/2 tablespoons fried garlic
1 teaspoon fish sauce
Salt and pepper, to taste
* Clean the rice with water. Put in a saucepan with 3 cups water and boil. After 8 minutes, when the mixture has thickened. Add chicken. Season with fish sauce, salt and pepper. Cook until the chicken is done. Turn off the heat and transfer in a bowl. Add egg, spring onions, and coriander. Sprinkle with fried garlic.
Serve immediately and enjoy!
