There’s new way of serving chicken fillet. Fresh from the broiler, this light and tasty chicken recipe can turn an ordinary meal into something to be remembered fondly. Topped with sweet and tangy pineapple and avocado salsa. Hawaiian vibe at its finest.

Ingredients

2 pieces chicken breast fillets
3-4 tablespoons pineapple juice
Salt and pepper, to season
1 teaspoon butter, softened

Pineapple-avocado Salsa

1 cup pineapple tidbits
1/2 cup avocado, cubed
1 small-sized onion, chopped
2 tablespoons chopped cilantro
2 tablespoons lemon/lime juice
salt and pepper, to season

Procedure

* Rub chicken fillet with salt and pepper. Place fillet on an aluminum foil. Add pineapple juice and butter. Wrap the foil. Place on the turbo broiler or oven, cook at 350°F for 20 minutes.

* In a bowl combine all the salsa ingredients. Season with salt and pepper. You can add chili powder for extra spice. Mix and blend well.

* Serve chicken fillet on a plate and top it with the salsa mixture.

Pineapple is a good source of fiber that could help your body to flush out the unwanted toxins. Have at least two servings of vegetables and fruits a day.
