Satay is a very popular delicacy in Indonesia. Grilled chicken in skewers perfectly goes well with peanut sauce, you can also use other grilled meats, too.

Ingredients:

Chicken marinade:
1 kilo skinless, boneless chicken breast fillets,
cut into 2 inch cubes
2 tablespoons brown sugar
5 tablespoons soy sauce
4 teaspoons ground ginger
2 cloves garlic, minced
1 teaspoon ground turmeric powder
1 teaspoon ground coriander powder
1 teaspoon ground cumin
2 tablespoon vegetable oil
1 tablespoon lime juice
1/4 teaspoon crushed red pepper (optional)

For the peanut sauce:
2 tablespoons brown sugar
2 1/2 tablespoons soy sauce
2 tablespoon lime juice
5 tablespoons creamy peanut butter
1/4 teaspoon crushed red pepper
1 clove garlic, minced

Procedure:

Combine and mix all the ingredients for the chicken marinate in a bowl. Add in the chicken. Let it stand for 10- 20 minutes.

Make the peanut sauce: combine all the ingredients in a bowl. Mix well to combine. Set aside.

Preheat grill. Thread chicken onto 8-inch bamboo skewers. Place chicken on the grill rack coated with a little cooking oil and grill for 5 to 7 minutes on each side or until chicken is done.

Serve chicken with the peanut sauce.
