Ingredients:

1 12 oz can whole kernel corn, drained
1egg, lightly beaten
1/4 cup milk
1 cup flour
1 tsp baking powder
50 g butter, melted
1/4 cup grated cheese
2 tbsps chopped green onions
salt and pepper to taste
enough oil for pan frying

Directions:

*Combine egg, milk and melted butter.Beat well.Season with salt and pepper according to your taste. Add flour and baking powder, whisk until smooth. Add drained corn, green onions and grated cheese. Stir to combine well.

*Heat oil in a frying pan until moderately hot. Drop a spoonful of the mixture in and level the top using a spatula. Fry until golden brown and then turn over to cook other side. Drain on paper towels. Serve hot.

Tip: To make a twist, you can add grated carrots, chopped zucchinis or any vegetables you prefer in the mixture.
