5 ears corn
1/2 medium tomato or 1/4 carrot, diced
1/4 cup olive oil
2 tbsps white vinegar
1 large white onion, diced
1/3 cup chopped basil
1/3 tsp salt and pepper
3 tbsps mashed potatoes, optional
1 tablespoon grated cheese
* Cook corn in boiling water for 8minutes (or until desired softness) and drain to cool when cooked.
* Cut the kernels from cob and mix together with tomatoes/carrots, olive oil, onion, basil, white vinegar, salt and pepper, and mashed potatoes as option.
* Chill for 1 hr before serving. Top with grated cheese and enjoy!
