This appetizing treat tuna balls would be a perfect snack or starter before your main course. Tuna mixed with cream cheese and spices, rolled into crunchy toasted almonds.
1 1/2 cups cream cheese, softened
1/2 cup canned tuna, drained
1/4 cup lite mayonnaise
1/2 teaspoon ground nutmeg
Pinch of ground black pepper
2 tablespoons grated Parmesan cheese
1/4 cup toasted almonds, slivered then broken into smaller pieces
* In a bowl, combine cream cheese, tuna, mayonnaise, nutmeg, pepper, and Parmesan cheese. Mix and blend well.
* Shape into bite-sized balls (approx. 1 1/2 tablespoons per balls) Rub hands with small amount of oil to prevent mixture from sticking. Roll in toasted almonds. Refrigerate for 30 minutes.
Serve and enjoy over a cup of tea or coffee!
