Ingredients

2 cucumbers, peeled and diced
1 cup vegetable broth
2 cups greek yogurt
1 tablespoon chopped green onions
3 teaspoons lemon juice
2 tablespoons chopped parsley
2 tablespoons dill
1 teaspoon salt

Direction

* In a food processor, add in onions, dill, parsley, and cucumber and process until finely chopped. Set aside.

* Mix broth and greek yogurt in a large bowl, then pour in cucumber mixture, lemon juice, and salt to taste. Mix well then refrigerate for 2 hours before serving. Enjoy!
