Ingredients

2 salmon fillets
1 teaspoon grated lemon zest
1/2 cup couscous
1 tablespoon softened butter
2 tablespoons chopped sun-dried tomatoes
2 tablespoons chopped parsley
1 bunch broccolini, blanched
salt and pepper, to taste

Direction

* Place couscous, lemon zest and butter in a bowl. Add 1 cup of boiling water and let stand for a few minutes. Fluff up couscous with a fork and mix well.

* Preheat oven to 190C.

* Season salmon fillets with some salt and pepper. Cut out 2 23cm x 23cm baking paper. Divide couscous, tomatoes and parsley into two and place on each cut baking paper. Then place fillets on each prepared parcel. Fold and seal the baking paper to form parcels.

* Place parcels on a baking tray and bake in the preheated oven for about 25-30 minutes or until salmon flakes easily with a fork. Remove from the oven and serve with broccolini on the side. Enjoy!
