1 large eggplant
1/2 cup pizza sauce
1/2 cup mozzarella cheese
6 salami slices, cut in strips
1/2 cup sliced fresh button mushrooms
2 tablespoons minced black olives
2 tablespoons olive oil
* Preheat oven to 180C.
* Slice eggplant in equal sizes, about 1cm thick each. Brush each slice with oil on both sides and place on a baking rack. Bake in the oven for about 4-5 minutes or until soft.
* Remove from the oven and spread pizza sauce on top of each slice and top with mozzarella, salami, mushrooms and olives. Return eggplant in the oven and bake for another 5 minutes or until cheese has completely melted. Serve hot and enjoy!
