This is an Asian fusion appetizing dish to serve with your grilled or fried foods. Eggplant with tomatoes, onions and green chilies with sweet sugarcane vinegar. Serve as an appetizer or as a side dish salad.


2 eggplants
1/2 cup chopped tomatoes
1/2 cup chopped onions
1/4 cup chopped long green chilies
5 tablespoons sugar cane vinegar
2 tablespoons sugar
Pinch of ground black pepper


* In a small bowl, dissolve sugar in vinegar and add in black pepper. Mix well. Set aside.

* Broil eggplant in griller until skin are blistered and charred. Let it cool. Peel off the skin and slice in the middle or butterfly cut. Transfer on a serving plate. Place tomatoes, onions and green chilies evenly on top. Pour in the vinegar dressing.

Serve and enjoy with your main dish.
