Ingredients

3 cups cooked rice
1 cup green peas, cooked
4 eggs, beaten, season with salt
1 cup chopped spring onions
1 tablespoon fried garlic
2 tablespoons hoisin sauce
2 tablespoons pad thai sauce
olive oil for cooking

Directions:

* Heat oil in a wok, swirling it around until very hot.Pour in the beaten eggs and cook until softly scrambled. Add the rice, hoisin sauce, pad thai sauce and green peas. Cook and stir well to combine for about 4 minutes. Add 3/4 cups of  the spring onions just before turning the fire off. Mix well. transfer to a serving bowl and garnish with fried garlic and the remaining spring onions on top. Serve hot.
