Ingredients

2 salmon fillets (or any fish of your choice)
4 tablespoons lime juice
1 tablespoon fish sauce
1 teaspoon sugar
1 teaspoon minced garlic
2 tablespoons sliced spring onions
3 red chilies, chopped
4 lime slices
2 tablespoons chopped coriander
salt and pepper, to taste

Method

* Rub salmon fillets with some salt and pepper. Place fillets in a heatproof dish and add ½ teaspoon of the garlic and 1 tablespoon of lime juice. Marinate for 10 minutes then steam for about 10 minutes or until cooked through. Transfer fillets onto a serving platter, reserving the juice from the dish where the fillets were steamed in. Pour the juices into a small bowl.

* Combine the rest of the lime juice and garlic, fish sauce, juice from the dish, sugar, chilies and spring onions; mix well until sugar dissolves.

* Pour sauce mixture all over the fillets and garnish with chopped coriander and lime slices. Top with sliced chilies, if desired. Serve with steamed or garlic rice or enjoy on its own.
