A vinaigrette is simply a combination of oil and vinegar. It is best when you use extra virgin olive oil. This goes very well with a salad of greens and tomatoes, goat cheese, and walnuts.
3 tablespoons extra virgin olive oil
1 tablespoon wine or balsamic vinegar
1 teaspoon mustard
1/2 teaspoon minced garlic
1/2 tablespoon water
Combine olive oil, wine or balsamic vinegar, mustard, minced garlic and water in a small bowl. Whisk to blend.
