Ingredients

1 pound medium sized shrimps, peeled and deveined
1/2 cup basil leaves
1 tablespoon chopped garlic
1 tablespoon chopped cashew nuts
2 tablespoons grated parmesan cheese
1 tablespoon lemon or lime juice
2 tablespoons extra virgin olive oil
cayenne pepper
Salt and pepper, to taste
Bamboo skewers

Procedure

* Mix and blend basil, garlic, cashew, Parmesan cheese, lemon juice, and extra virgin olive oil. Season with cayenne pepper, salt and pepper. Purée until smooth.

* Soak bamboo skewers in water for about 30 minutes (this will help in avoiding skewers to burn during grilling). Thread shrimps on the skewers. Rub shrimps with the pesto mixture and place on a tray. Marinate for about 30 minutes or overnight in the refrigerator.

* Grill shrimps over medium high heat. Cook at least 3 minutes per side.

Serve and enjoy with rice or corn!
