Soup set the pace for the balance of the meal. This brightly orange-colored soup is packed with healthy vegetables that would give extra benefits to your body. Combination of carrots, yellow bell pepper, fennel and sweet potatoes. Make this hearty soup as a morning meal or a starter to your menu.

Ingredients

1/4 cup butter
1 medium white onion, chopped
5 cloves of garlic, chopped
5 cups water
1 carrot, chopped
1 yellow bell pepper, chopped
1 small-sized fennel bulb, chopped
1 sweet potato, chopped
1 cube chicken broth
1 cup evaporated milk
1/3 cup heavy cream
1/2 teaspoon turmeric powder
Salt and pepper, to taste
Cayenne or chili powder
2 tablespoons chopped parsley

Procedure

* In a saucepan or large pot, melt butter. Sauté garlic and onion. Add the remaining ingredients except cayenne pepper and parsley. Season with salt and pepper according to taste. Bring to a boil. Cover. Simmer over low heat for 30 minutes.

* In a food processor or blender, purée mixture. Serve hot and sprinkle with cayenne pepper and chopped parsley.

Add cream before serving for additional smooth and creamy taste.
