Potato is versatile, economical and nutritious and is also available all year round. Try out this oven recipe and new way of serving your fries. It is also a good source of potassium and when eaten with their skin, potatoes also provides necessary fiber.

Ingredients

2 tablespoons peanut oil
1 tablespoon olive oil
1/4 teaspoon sea salt or kosher salt
1/4 teaspoon fresh ground black pepper
1/2 teaspoon finely chopped basil
1/2 teaspoon finely chopped parsley
1/2 teaspoon paprika
3 medium sized potatoes, cut into thin sticks

Procedure

* Preheat oven to 425°F.

* In a large bowl, combine all ingredients except potatoes. Mix well. Toss in potatoes until it’s evenly coated with mixture.

* In a roasting pan, spread a single layer of potato sticks. Cook in the oven for about 30 minutes or it turns golden brown. Turn over 3 times during cooking to cook evenly.

Serve and enjoy with ketchup or your choice of dips. You can also use truffle oil for a different flavor
