Ingredients

4 large potatoes
1/3 cup milk
4 tbsps butter (or olive oil)
Pinch of salt
1/2 cucumber or zucchini, sliced

Preparation

* Cut and boil peeled potatoes to desired texture. Drain the water and mash the potatoes with milk and butter (or olive oil). Add more milk if necessary for desired consistency. Season with salt to taste. Set aside.
* Cut the cucumber/zucchini and let them chill to almost frozen. Serve on top of preheated mashed potato for a play of hot & cold.

Tip: May fry the mashed potatoes to a golden brown with a little crisp for an optional serving.
