This is a very light marinade mixture for your chicken barbecue. Gratifyingly enjoyable with outdoor parties. A mixture of lemon juice, ginger, garlic, and subtle salty taste of fish sauce with a sweetness of the honey would make this dish a difference from other usual barbecue marinade.


2 chicken breast fillets, cut into cubes

Lemon-Ginger marinade

1/2 cup lemon juice
1/2 fish sauce
4 tablespoons honey (adjust if desired)
2 tablespoons chopped ginger
2 teaspoons chopped garlic
1 1/2 tablespoon vegetable oil
1/2 teaspoon cumin powder
1/2 teaspoon paprika powder

6-8 bamboo stick skewers soaked in cold water


* In a food processor or blender put all marinade ingredients. Blend until puréed. Thread chicken into the barbecue sticks. Place chicken on a platter and pour in lemon-ginger mixture. Marinate overnight or for 3 to 4 hours. Cook over a charcoal grill or electric griller.

Serve with pickled vegetables and steamed rice to enjoy! You can also use lamb, turkey or shrimp for this marinade mixture.
