Ohhh lala! Sweet, light and brilliant Salsa de Piña is a Mexican delight. Serve it with your nachos, tacos, quesadillas, and even your favorite enchiladas.
1 1/2 cups chopped fresh pineapple
1 medium-sized tomato, chopped
1 medium-sized red onion, chopped
2 tablespoons chopped jalapeño peppers
2 tablespoons chopped cilantro
1/2 teaspoon chopped mint leaves
3 tablespoons lime juice
Pinch of cumin powder
Pinch of cayenne pepper
Pinch of salt
* In a large bowl. Combine pineapple, tomatoes, onions, jalapeño, cilantro and mint leaves. Set aside.
* In a small bowl, mix and blend lime juice, cumin, cayenne and salt. Pour over the prepared pineapple.
For presentation purposes: Place salsa in the pineapple bowl. To prepare pineapple bowl: Ready one whole fresh pineapple and cut in half. Scoop out pineapple. Keep it chilled before using.
