Ingredients

1 medium zucchini, round cut
1 small yellow squash, round cut
1 tablespoon freshly squeezed lemon juice
1 tablespoon chopped mint
1 tablespoon olive oil
salt and ground black pepper, to taste

Preparation

* Sprinkle salt on zucchini and yellow squash until some liquid dries out.

* Mix juice, olive oil, mint, salt and pepper in a bowl

* Drizzle dressing over cut veggies and sprinkle additional mint on top if desired.

Tip: May also be served with tomato bits for additional taste.
