500 grams chicken breast fillets,cut into 2 cubes
Moroccan Lemon Marinade:
1 teaspoon fresh thyme leaves
2 tablespoons chopped parsley
1 tablespoon rosemary leaves
2 cloves garlic, minced
1 teaspoon whole black pepper, crushed
zest and juice of 1 lemon
1 tablespoon olive oil
8 pcs bamboo skewers, soaked in cold water for 20 minutes
* In a bowl, combine all the ingredients for the marinade. Add the chicken and toss to combine. Marinate for an hour.
* Preheat barbecue or grill to a high heat. Thread chicken onto skewers, (save the marinade) and place on barbecue grill or under grill. Cook, basting frequently with the marinade and turning for 5-10 minutes or until chicken is cooked.
* Serve over steamed rice and garnish with chopped parsley.
Tip: Can also be served together with your favorite sauce and sliced avocados on the side.
