1 lb butternut squash, peeled and diced
1 tablespoon olive oil
3/4 cup chopped red onion
1 large pear, peeled, cored and diced
6 oz soy chorizo sausages, crumbled
1/2 teaspoon cinnamon
1/4 teaspoon coriander
poached or fried eggs for serving, optional
* In a non-stick pan over medium heat, heat olive oil. Saute onions until soft and translucent, about 5 minutes.
* Meanwhile, place the squash in a covered microwavable dish with 1 tablespoon of water. Cook on high for 3 minutes, until just tender.
* Add the pears, squash, cinnamon, chorizo and coriander to the skillet with the onions. Increase heat to medium high and cook for about 5-10 minutes or more, stirring occasionally, until cooked through and browned.
Serve hot with poached or fried eggs, if desired.
