Ingredients

8 potatoes, scrubbed clean
olive oil (optional)
ground black pepper
bowl of cold water

Preparation

* Cut potatoes using mandolin cutter to 1/8 inches thick.

* Soak in cold water for 10minutes then rinse before drying them with dish cloth.

* On a dish topped with paper towels, place the slices not touching each other, then season by brushing with olive oil and dash of pepper. Arrange potato slices on a microwaveable plate (without touching each other, you might need to do this in batches) and microwave on high for 3 minutes. Let potatoes rest for a minute. Turn chips over and then microwave on 50% for another 3 minutes or until crisp.
