This dish serves as a side dish or an appetizer to balance out your taste palette. Perfect to pair with fried, grilled, roast and even braised foods. Ingredients

Mixed vegetables

1 carrot, thinly sliced
1 medium red onion, thinly sliced
1 green or red bell peppers, cut into strips
1 tablespoon sliced garlic
2 tablespoons chopped jalapeño or green chilis
2 tablespoons thinly sliced radish

Pickling Vinegar

1 1/2 cups sugarcane vinegar
1 teaspoon thinly sliced ginger
1/2 cup sugar
Salt and pepper, to season

Procedure

* In a hot saucepan pour in vinegar, ginger and sugar. Let the sugar dissolve while stirring (adjust amount of sugar depending on your taste). Cook for 5 to 7 minutes over medium-high heat. Season with salt and pepper. Set aside. Let it cool.

* In a bowl, mix all the vegetables and pour in the vinegar mixture. Serve and enjoy with your main dish.

* You can also adjust Ingredients for a larger serving. Store in an air-tight container jar.
