This is a light and easy salmon dish with an elegant taste, perfect for those last minute dinner requests where you’re looking to impress. Pair it with your favorite side dish.

Ingredients:

Poached salmon
• 500 g salmon fillet
• 1 cup white wine
• ½ cup water

Yogurt-dill sauce
• 100 g low-fat natural yogurt
• 4 tbsps Dijon mustard
• 4 tbsps lemon juice
• 1 tbsp honey
• Handful chopped fresh dill

Instructions:

• Combine the yogurt, dill, mustard, honey and lemon juice in a small bowl. Mix well and chill until ready to serve.

• Combine white wine and water in a medium saucepan and bring to a boil. Lower heat and gently add the fish in. Adjust the amount of water as necessary to just cover the fish. Cover the pan and simmer for 10 to 12 minutes until salmon has cooked through or flakes easily. Take the fish out with a slotted spoon and transfer to a serving platter. Serve with the dill sauce and a slice of lemon if preferred.
