Ingredients

6 medium potatoes, peeled and cubed
200 grams cooked bacon tidbits
4 medium onions, minced
2 celery ribs, minced
½ cup mayonnaise
½ teaspoon salt
¼ teaspoon ground black pepper
½ cup sour cream
grated cheddar cheese
1 tablespoon chopped green onions, for garnish

Preparation

* Boil the potatoes until soft, then drain and let it cool.

* Gently mix the potatoes with all the ingredients except bacon and green onions. Chill for a couple of hours.

* Top with extra cheddar cheese, green onions and bacon.
