Prepare your own food with low-calorie ingredients. This soup recipe is full of healthy ingredients that would give your body the right amount of nutrition needed. Creamy and light soup that is perfect to serve hot or cold.

Ingredients

2 tablespoons lite butter
2 tablespoons flour
1 small-sized potato, diced
1 small-sized onion, chopped
1 rib of celery, diced
1 cup pumpkin, diced
1 cup kale
1 cup chicken broth
1 tablespoon lemon juice
1/4 teaspoon paprika
pinch of nutmeg
1/4 teaspoon minced garlic
1 cup milk
salt and pepper, to season
all-purpose cream (optional)

Procedure

* In a saucepan, melt butter and sprinkle with flour. Make a roux. Add in vegetables, pumpkin and kale, mix and blend well. Add in remaining ingredients, except cream. Simmer over low heat and until potato is cooked.

* In a food processor or blender, purée mixture. Transfer in a serving bowl and fold in cream. Serve hot with bread.

Other variation: refrigerate soup, once cold. Serve chilled and fold in cream.
You can also use spinach if kale is not available. Adding a drop of hot sauce would bring a nicely different taste.
