This is a healthy and simple gluten-free snack to eat. Chia seeds do wonders to your body because of its nutritional benefits. Full of omega-3 fatty acids, fiber, calcium, and protein. It can be eaten raw and perfect to add in your salads, breakfast cereals and smoothies. Chia seeds tends to expand with liquid.

Ingredients

2 cups soy milk
2 tablespoons raw honey
1/2 cup chia seeds
drop of vanilla extract
zest from one small lime or lemon
1/2 cup fresh raspberries
mint leaves (optional)

Procedure

* Pour the soy milk into a resealable jar, add in raw honey, chia seeds, vanilla extract, and lemon or lime zest. Put the lid on and shake well. Refrigerate for about 2 hours or preferably overnight. Check and shake every now and again.

* Transfer in individual glasses and top with raspberries and mint leaves.

You can also use assorted fruits, if desired.
