A hearty salad with the Greek flavors of feta, oregano, kalamata olives and plum tomatoes.



1 head romaine lettuce, torn by hands
1 small cucumber, peeled, diced
1 green pepper, sliced into thin rings
1 red onion, sliced into thin rings
3 plum tomatoes, seeded, chopped
1/2 cup kalamata olives
1/2 cup crumbled feta cheese


1 tablespoon red wine
1 tablespoon lemon juice
5 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon dried oregano


* Soak onion rings in cold water for 5 minutes to lessen sharpness of flavor. After soaking, squeeze out excess water and dry with paper towels.

* Combine all dressing ingredients in a bowl and whisk until well blended.

* In a serving bowl, combine all the salad ingredients except the cheese. Drizzle dressing over the salad and sprinkle with feta cheese. Serve and enjoy!
