These delectable mango and shrimp cocktail is a sure hit if you are planning a party. Make it presentable by serving it in a cocktail glass and garnish with chopped cilantro.
2 cups diced ripe mangoes
2 to 3 cups medium shrimps, cooked, peeled and deveined
1 piece red or green bell pepper, chopped
1 cup diced avocado
4 tablespoons olive oil
2 tablespoons lemon or lime juice
1 tablespoon finely chopped cilantro
salt and pepper to taste
In a large bowl toss in mangoes, shrimps, Bell pepper, and avocado. Set aside.
In a separate bowl mix together olive oil, lemon juice, and cilantro. Stir until well blended. Season with salt and pepper.
Add in dressing to the mango and shrimp. Toss to blend. Chill until ready to serve.
Spoon the mixture into a cocktail glass and serve.
* For extra spice add a dash of cayenne pepper or chili sauce into each cocktail glass before serving.
