Having a food that you can easily prepare for your busy day is a perfect way to get your body healthy and fit. This full packed sandwich is a must try! Spicy chickpea and avocado with garlic, onions, tomatoes and bed of lettuce. This is a perfect vegan food to serve.

Ingredients

2 tablespoons olive oil
1 tablespoon onion, chopped
3 cloves garlic, chopped
2 tablespoons chopped tomato
1/2 cup chickpeas
1/4 cup chopped avocado
Salt and pepper, to taste
pinch of cayenne pepper
1/4 teaspoon chili flakes
4 lettuce leaves
French baguette, or your choice of bread
Lime wedges (optional)

Procedure

* Heat 1 tablespoon of olive oil in a pan. Place chickpeas and cook until slightly brown. Set aside.

* On the same pan, heat the remaining oil. Sauté onions, garlic, and tomato. Add in cooked chickpeas, season with salt and pepper, cayenne pepper and chili flakes.

* Toast baguette and place lettuce. Add in sautéed chickpeas and top it with avocado.

Serve with vegan chips and drizzle lime, if desired. You can also add some sour cream as an additional sauce.
