Sautéing the rice in oil then simmering it in chicken broth imparts a wonderful aroma and flavor to the rice.

Ingredients:

vegetable oil for sautéing
1 big onion, chopped
1 1/2 cups unwashed rice
3 cups chicken broth
salt and pepper to season

Procedure:

• In a large pot or rice cooker, heat oil and sauté the onion. Add unwashed rice and toss until slightly cooked. Add chicken broth. Cover pot and let simmer until rice is cooked. Season with salt and pepper to taste.

Serve this steamed rice with your favorite dish. Top it with roasted shallots and chopped spring onion if desired.
