Ingredients

1 ½ lbs salmon fillet
2 cups tequila
1 tablespoon cumin seeds
1 ½ cups yellow mustard seeds
½ cup honey
½ cup finely chopped cilantro
1/4 cup salt
2 1/2 teaspoons grated lemon zest
½ teaspoon, ground black pepper

Preparation

Mustard Marinade
*In a small skillet, mix cilantro, cumin, and mustard over low heat while stirring for about 2 minutes. Transfer to a small bowl to let it cool. Set aside.

Tequila Marinade
*Mix the honey, salt, and tequila, in a small bowl, then set aside.

The Salmon
*Dry the salmon using paper towels then place on a baking sheet, skin-side down.
*Pour the tequila marinade and mustard marinade over the salmon.
*Spread the marinade over the salmon, sprinkle the zest, cilantro, and pepper over the salmon.
*Tightly cover with plastic wrap then refrigerate for 2days with a heavy cutting board (or any substitute) placed on top to weigh down.
*Scrape off the excess marinade, then slice before serving.

Best served with herbed cream cheese or pickles of choice.
