This tuna salad in cucumber cups is a lovely appetizer or a starter in your party. Elegantly presented for your special guests to enjoy.
1 cup canned tuna flakes in oil, drained
1 small onion, finely chopped
1 rib of celery, finely chopped
1 teaspoon lemon juice
1/2 cup mayonnaise
1/4 cup all-purpose cream
1/4 cup cream cheese
salt and pepper
2-3 medium size cucumber, peeled
2 tablespoons chives, chopped
* Prepare cucumber cups ahead of time. Cut into 2 inch thick. Remove 1 inch of seeds with spoon. Arrange in tray and set aside.
* In a large bowl, combine tuna flakes, onion, celery, lemon juice, mayonnaise, all-purpose cream, and cream cheese. Season with salt and pepper. Mix well.
* Scoop a spoonful of tuna mixture into the cucumber cups. Top with chives and sprinkle with cayenne pepper.
