Ingredients

2 plain or whole wheat tortillas
1 chicken breast fillet
1 tablespoon olive oil
1/2 tablespoon lemon juice
Salt and pepper
1/2 cup sliced strawberries
1/2 cup sliced avocado
1/4 cup chopped mint leaves
1/2 cup crumbled brie cheese or camembert

Maple-Mustard Ginger Dressing

1 tablespoon olive oil
2 tablespoons maple syrup
1 teaspoon Dijon mustard
1/4 teaspoon grated ginger
Pinch of cinnamon powder
1/4 tablespoon lime juice

Procedure

* In a small bowl, mix olive oil, lemon juice, and season with salt and pepper. Rub mixture on chicken fillet and place in a griller. Cook until tender. Cut in strips. Set aside.

* For the dressing: in a small bowl, mix and blend all ingredients. Set aside

* Place tortilla in a baking tray. Arrange chicken, strawberries, avocado, mint leaves, and cheese. Drizzle dressing on top. Roll to wrap, secure with toothpick. Heat in the oven for 3 to 5 minutes or until cheese melts. Serve and enjoy!
