Got basil in your backyard? Try this vegan pistachio basil pesto! Pesto without cheese for a dairy-free and plant based option. Serve with toasted organic bread and fresh tomatoes and you have a superb healthy meal.


1/2 cup extra virgin olive oil
1/2 cup pistachio nuts
2 tablespoons cashews
2 tablespoons oatmeal
1 cup fresh basil leaves
1 tablespoon minced garlic
pinch kosher salt


* In a food processor put all ingredients. Blend well until smooth consistency. Adjust olive oil, if needed.

Serve with slices of bread and cherry tomatoes, if desired.
