Feast in with this wonderful fresh watermelon salad with arugula leaves, goat’s cheese and corn, drizzled with luscious elegantly tasting vinaigrette dressing with maple syrup for some sweetness.

Ingredients

2 cups arugula leaves
1/2 cup goat’s cheese, diced
1/2 cup fresh watermelon, slice in cubes
3 tablespoons canned whole corn kernel
2 tablespoons olive oil
1 1/2 tablespoons wine vinegar or balsamic vinegar
1 teaspoon maple syrup
1/2 teaspoon lime juice
Pinch of black pepper powder

Procedure

* In a salad bowl, arrange arugula leaves, goats cheese, watermelon, and corn kernel. Set aside.

* In a small bowl combine olive oil, wine vinegar, maple syrup, lime juice and season with black pepper.

* Drizzle prepared vinaigrette dressing over the salad or serve on the side.

You can also add some nuts and use your favorite green salads or choice of cheese.
