Apple Slaw

Would you like something light and healthy appetizer or side dish to pair with your meal? Here’s a sweet and creamy apple slaw you can make with a few pantry staples.



1 piece small head green cabbage
2 medium carrots, peeled, cut into thin strips
1 green apple, cut into strips
1 red apple, cut into strips
2 to 4 sprigs spring onions, chopped
2 tablespoons apple cider vinegar


2/3 cup sour cream
3/4 cup lite mayonnaise
1 tablespoon honey or sugar
2 tablespoons toasted black sesame seeds
salt and pepper, to taste


* Wash and cut cabbage into fine strips. In a large bowl, combine cabbage, apples and green onion. Add vinegar and toss to coat.

* Whisk sour cream, lite mayonnaise and honey in a bowl to blend. Add to cabbage and apple mixture and toss. Chill for about 20 minutes. Transfer to a serving bowl and season with salt and pepper. Sprinkle with sesame seeds. Serve chilled.
