This is a simple and easy snack to make. Creamy cheese covered with crispy bacon bits, bell pepper, parsley and nuts. Prepare this yummy treat a night before serving. Serve with crackers, pretzels or your choice of favorite bread.
450 grams bacon
1 1/2 cups grated cheddar cheese
225 grams softened cream cheese
1 small size green bell pepper, coarsely chopped
1 tablespoons chopped green chili pepper (optional)
1/4 cup fresh parsley, chopped
1/4 cup walnuts, finely chopped
* In a frying pan, cook bacon until crisp. Drain on a paper towel to remove excess oil. Coarsely chop. Set aside.
* In a bowl, combine cheddar cheese and softened cream cheese, let it chill in the refrigerator for about 20 minutes or until firm. Use spatula to scrape it out of the bowl. Shape into one big ball or several smaller ones. Set aside.
* In a separate bowl, combine chopped bacon, bell pepper, green chilies, parsley, and chopped walnuts. Dredge cheese ball with mixture. Seal in a cling/plastic wrap or aluminum foil. Refrigerate at least 24 hours.
Serve at room temperature with crackers. You can also use assorted nuts.
