This healthy fish dish is packed with citrus and refreshing flavors. Aside from using orange for the sauce you could also try other combination of citrus fruits like lemon, grapefruit or lime. This recipe is fast and easy to prepare.
2 pcs sea bass fillets
freshly ground black pepper
3 tablespoons extra virgin olive oil
1/2 cup chopped onion
2 tablespoons butter
1/2 cup orange juice
1/2 teaspoon dried thyme
1/2 bunch of asparagus, blanched
* In a hot pan, sauté onion in 1 tablespoon of olive oil. Cook until translucent. Add in butter, cook for about 3 minutes. Pour orange juice and thyme. Let the sauce caramelize. Set aside.
* Season fish with salt and pepper. Pan-fry both sides in the remaining olive oil over medium heat. Set aside.
* Arrange asparagus on a serving plate and place cooked fish. Drizzle prepared orange sauce on top.
