These sweet potato chips are to die for. Extremely good snack to prepare for your family and friends. Chips are baked to keep them healthy yet still has the crisp that you need. Serve with creamy garlic dip.
2 medium sweet potatoes, sliced thinly
2 1/2 tablespoons olive oil
kosher salt or sea salt
Freshly ground black pepper
Garlic sour cream dip
1/2 cup sour cream
1 1/2 tablespoons mayonnaise
1 teaspoon minced garlic
1/2 teaspoon finely chopped parsley
Salt and pepper.
* Preheat oven to 350 °F.
* Place parchment paper on a baking tray. Place sweet potatoes and drizzle with olive oil. Season with salt and pepper. Toss until all ingredients are incorporated.
* Bake in the oven for 20 minutes. Flip and shake sweet potatoes. Cook for another 15 minutes to achieve crispiness.
* To make the dip: combine sour cream, mayonnaise, chopped parsley and garlic. Season with salt and pepper if desired.
