This enticing beef canapés with tomato and basil mayonnaise is easily picked up with your fingers, these tiny open-faces sandwiches make a delicious hot appetizer to pass at a party.
1 baguette, sliced 1/2-inch thick
150 grams beef tenderloin, cooked, sliced thinly
1 tablespoon olive oil
1/2 cup lite mayonnaise
1/4 teaspoon garlic powder
2 tablespoons grated Parmesan cheese
2 tablespoons basil leaves, finely chopped
pinch of ground black pepper
3-4 medium-sized tomatoes, sliced
1 tablespoon toasted garlic, for garnish (optional)
2 tablespoons basil leaves or you can also use cilantro, for garnish
* In a small bowl combine mayonnaise, olive oil, Parmesan cheese, garlic powder, basil, and season with black pepper.
* Toast baguette in an oven toaster.
* Spread mayonnaise mixture on toasted baguette slices. Top with roast beef and tomato slice. Garnish with toasted garlic and basil, if desired.
You can also substitute beef with salmon, tuna or your choice of fish.
