This Filipino home-cooked classic can make the middle of the week feel like a Sunday! Delightful dish that has a sweet and savory taste from the pork and sauce.
Ingredients:
1 kilogram ham hock, whole or cut into 2-inches thick pieces or
1 tablespoon minced garlic
1 teaspoon whole peppercorns
1 medium red onion, diced
3 tablespoons brown sugar
1 teaspoon salt
3 cups pineapple juice
2 cups water
3 tablespoons soy sauce
3 dried bay leaves
2 tablespoons vegetable oil
Procedure:
* In a deep pot, heat oil. Sauté onion and garlic until onion is translucent and garlic is fragrant. Put in peppercorns, mix well. Add in pork hocks, sear all sides for about 5 minutes. Pour in water and pineapple juice, cover and bring to a boil over medium heat.
* Once boiling, add bay leaves and soy sauce, lower the heat, cover and simmer for 1 to 2 hours until meat is tender. Check with fork. Add more water, if needed. Add brown sugar. Stir well; season with salt. Allow some water to evaporate; wait until the fat from pork has been rendered and sauce is thick.
Serve with steamed rice or mashed potatoes.
