Indulge with fresh seafood dish with this buttered scallop with sweet kernel corn recipe. Simple yet classic dish to serve for your guest or family.


4-6 fresh scallops, shelled
1/2 cup canned whole kernel corn, drained
1 small tomato, chopped
2 tablespoons butter
1/2 teaspoon minced garlic
1 tablespoon lemon juice
salt and pepper, to taste
1 teaspoon chopped basil


* In a hot pan, sear in scallops in butter and lemon juice over medium-high heat until slightly brown. Set aside scallops.

* In the same pan with the remaining butter and lemon, add garlic and sauté for 2 minutes. Put corn, tomato, and basil. Cook for another minute. Season with salt and pepper.

* Arrange dish on a serving plate. Place corn and tomato, put scallops on top.

For healthy options, you can use olive oil instead of butter.

Scallops is a good source of omega-3 and fatty acids, which has a combination of magnesium and potassium.
