Cantonese Pepper Beef

Perk up your dinner with this insanely delish Chinese beef recipe. Stir- frying beef with vegetables is one of the most delicious and versatile techniques of Chinese to master. Marinated beef strips to give them flavor and a smooth coating. Cook the strips quickly, combining them with vegetables.


3/4 lb lean beef, cut into thin strips
1 tablespoon dry sherry
1 tablespoon soy sauce
1 tablespoon water
1/4 teaspoon salt
1/4 teaspoon sugar
2 teaspoons cornstarch
3 tablespoons vegetable oil
1 teaspoon minced garlic
1/2 teaspoon minced fresh ginger
2 small green and red bell peppers, seeded and cut in 1/4 inch strips
1 small onion, cut into strips
1 tablespoon water
1/4 teaspoon salt

Cooking sauce:

1 tablespoon soy sauce
1 tablespoon cornstarch
1/2 cup chicken broth or water


* In a bowl, combine sherry, soy sauce, 1 tablespoon water, 1/4 teaspoon salt, sugar, and cornstarch. Add in beef and stir to coat, and stir in 1 teaspoon of vegetable oil, let it stand for 15 minutes to marinate.

* For the cooking sauce: combine all ingredients in a small bowl. Set aside

* Heat a wok or wide frying pan over high heat. Add 2 tablespoons of oil. Stir in garlic and ginger. Add beef and stir-fry until meat is browned on the outside about 2 minutes. Remove from pan.

* Heat the remaining vegetable oil. Add bell peppers and onions, stir fry for 30 seconds. Add the 1 tablespoon water and 1/4 teaspoon salt. Cover, and cook for 1 minute. Return meat to pan, stir in the prepared cooking sauce. Cook until sauce bubbles and thickens.

Serve on a large platter and enjoy it with steamed white rice!
