Cauliflower Salad

Must Try

This cold entrèe dish is delicious and satisfying. Sure to have a place at any buffet, parties and receptions. Blanched cauliflower with yogurt and herbs dressing that is low in fat and calories.


2-3 cups cauliflower florets
2 tablespoons green peas
1 cup plain yogurt
1 teaspoon cream cheese
1 teaspoon Worcestershire sauce
1/4 teaspoon paprika
1/4 teaspoon garlic
1/4 teaspoon oregano
Pinch of thyme


* In a food processor, put all ingredients, except cauliflower and green peas. Blend and mix well. Set aside.

* In a pan with slightly salted boiling water, blanched cauliflower and green peas for 1 minute. Remove from sauce pan. Immerse in a bowl of ice-cold water. Drain well.

* Pour in the yogurt mixture over cauliflower. Toss to combine well. Refrigerate for about 1 hour or until ready to serve. You can also add chopped red onion, if desired.

Yogurt contains vitamins B2 which is needed to release energy from food and B12 for a healthy nervous system. It is also a good source of phosphorus and calcium.
